Making of the Pumpkin Cupcakes with Dark Chocolate Frosting + Pumpkin Pure recipe!

Hello again!
So, in our previous post Pumpkin Cupcakes with Dark Chocolate Frosting we forgot to add some photos of the whole process of making the cupcakes! These things happen when you're posting after midnight! hehe 
First thing: the P u m p k i n  P u r e! Having some pumpkins in the garden we thought of transforming them into a beautiful pure than buying the one in the cans! So, we searched for a recipe for it! Easy things! Firstly, you cut the pumpkin in two and you get rid of the stem. Then cut the pumpkin into big pieces (with their skin on them). After that you just scoop out the seeds and all the pumpkin membranes! Take a roasting pan and place the pieces upside down. Bake them in a preheated 200°C oven for about 30 minutes or until tender. We left some pieces to be cooked for another half an hour cause they were still strong! You can check for tenderness by piercing a fork to the flesh of the pumpkins. If they are cooked, the skin will give in easily. Let them cool for some minutes, so it will be easier to work with them and then scoop out the flesh of the pumpkins. The flesh will come off very easily if baked completely. Then you can either mash it using your hands or spoon , but if you want the consistency of a store bought canned pumpkin then use a processor. We used a spoon and the pure came out really smooth and rich! One more step and the pure is done..We don't want any liquids in the pure and so we are gonna get rid of them. Pour it down a sieve (or cheesecloth or coffee filter ) placed in a deep bowl and stir with a spoon until all the liquid is sieved completely. And you have some thick natural pumpkin pure!! 


FROSTING. As we said in our previous post the secret for a thick, no melting frosting is hidden in the butter! Choose a butter that is suitable for confectionery (Αdoro and Lurpak for Greece)! The confectioners sugar! There is a lot of it in the frosting cause this one makes the frosting rich and thick! If you want less sugar just don't add anymore when the frosting comes to the desired thickness! If you have a sweet tooth, add all the cups in the recipe!
