Peach galette with basil ✿

Fall is orange. Peaches are orange. This galette is so orange, peachy and autumnal! I found this video some days ago and I directly fell in love with the shades of it and of cource with this galette. I bought the peaches and got in mom's peachy kitchen to make this loveliness! I have to say that it was one of my best baking times! This galette can be made on summer too but for me It is so so autumnal. It makes the home smell like fall! As for the taste...we all loved it! The crust was really really tasty! The feeling was sweet from the sugar but kinda sour cause the peaches were sour. If you want your galette to be more sweet, choose some ripe peaches or add more sugar! It's a hit believe me! We are gonna  bake one again for sure and of course we'll experiment with other fruits too! Apples and oranges, huh? 

|| For pastry crust: 
1 cup of all purpose flour
113 g cold unsalted butter, in cubes (if you use salted butter, don’t add salt)
1/2 teaspoon salt
1/8 cup ice water (use the least you can)

|| For filling
4 peaches, sliced
1/3 of a cup sugar
1, 5 tablespoons of cornstarch
1 tablespoon of ground lavender (I skipped this part)
Handful of fresh basil leaves, roughly chopped
Melted butter (for brushing)
Brown sugar (for sprinkling)

||Make crust: In a bowl mix together flour and salt (if you added). Add in the butter and work it with your fingers until it looks crumbly. Add the cold water. Don’t add to much!! Keep stiring until the dough comes together. Shape the dough into a ball and wrap it with a plastic wrap. Let it chill in the fridge for at least 2 hours until overnight. 

||Make filling: When the dough is chilled, take it out of  the fridge and make the filling. Cut the peaches in slices. Mix the cornstarch,( lavender), and sugar in a bowl.  Using your hands, toss the sugar mix with the peaches until it goes everywhere. Let it sit for 5-10 minutes. Meanwhile, chop roughly the basil leaves and add them in the filling. Mix again. 

||The galette: Finally, roll out the dough. Use two parchment papers so it will be easier and the dough won’t stick to the roller. Roll the crust out into a circle a millimetre or so thick. Transfer it with the one parchment paper to a baking sheet. Arrange peaches in the centre the one close to the other making circles. Leave some of the crust without filling so you can fold the edges of it and make the galette. Let the galette chill for 10 minutes in the fridge. After chilling, remove it from the fridge.  Brush the crust with butter and sprinkle some brown sugar on it. Bake at 200/ 400F for 30 minutes or until the crust becomes golden brown.
