Long time no post, huh? Christmas period is here for good! The Christmas tree is sitting there in its favorite corner, christmas lights everywhere, platters with reindeers and christmas delicacies waiting for you on the table! We've made these cupcakes a couple of weeks ago, but you can make them in these festive days as well! I'm sure kids will love it because one of its ingredients is kids yogurt with strawberry flavor! They were really fun to make and so beautiful as you can see! They were tasty of course, if you ask (: The whole house was smelling like this kids strawberry yogurt! Yum yum!
I N G R E D I E N T S for the C U P C A K E S:
50g. of butter
100g. of caster sugar
1 egg
135g. of strawberry yogurt (or any flavor you want)
150g. of self- raising flour
1/4 of a teaspoon baking soda
1 teaspoon of vanilla extract
I N G R E D I E N T S for the F R O S T I N G:
100g. of unsalted butter, at room temperature
250g. of confectioners’ sugar
1 teaspoon of vanilla extract
2 tablespoons of strawberry jam
(the jam should match with the yogurt)
D I R E C T I O N S:
- In a bowl cream together the butter with the sugar. Mix them for 2'-3'!
- Add the egg and continue mixing till the mixture becomes fluffy and white.
- Add in the vanilla and the yogurt and after that the flour (sifted) and the baking soda. Mix till everything is totally incorported in a homogeneous mixture.
- Divide the mixture equally in 12 paper cups.
- Bake for 20' in a 170°C preheated oven.
Frosting time:

Frosting time:
- While waiting for the cupcakes to cool completely, we are making the frosting.
- Sift the confectioners' sugar to assure there are no lumps and set aside.
- In a mixer, beat the butter at medium speed until it becomes fluffy (for about 2 minutes).
-Gradually add the sifted sugar. Beat on low speed after each addition.
-Gradually add the vanilla, too.
- Before the last congrctioners' sugar addition, add the jam an mix again. Don't overmix!
- Put the frosting in the fridge for some minutes to cool.
- When the cupcakes cool completely, add the frosting with a piping bag (ideal) or with a spatula on them!
- Sprinkle your favorite toppings on them for pretty cupcakes, great for kids!
