Mini meringue drops


Easier than this?! No!
Mini meringue drops are such an easy, sweet and delicious delicacy!  It smells and tastes like Cotton Candy! Yum yum!

They are so sweet that remind us the song "Sugar Sugar" by The Archies !

 We got this recipe from Sorted! Again?! Yeah, we love these guys! All the recipes we’ve tried from them are just a hit !

  3 egg whites
3/4 cup of granulated sugar (150g)
juice of half a lemon
food colouring gel

How to:
-In a bowl whisk with a mixer the egg whites until you have soft peaks.
- Pour in the sugar and continue to whisk until stiff glossy peaks are reached and the sugar has dissolved into the whites.
-Pour in the lemon juice and whisk again.
-Then brush the inside of a piping bag with the food colouring gel. This technique will give your drops some cutes colourful highlights. You can avoid this part if you don’t have food colouring.  
- Put with a spatula the meringue into the piping bag and pipe small blobs onto a baking paper lined tray so that they peak at the top.
- Bake in a preheated oven at 125ºC for 1 hour until crisp on the outside but still slightly sticky inside. They will get a light gold color from the outside but the higlights will still be obvious!
- Let them cool completely before eating them! You can serve them with chocolate, fruits, as a cake decoration…or just like that! They are delicious!
